a Sara Intingola: per la polenta di castagne non avrei immaginato la compagnìa del cacio. vorrei aver ancora fame adesso e aver l'epa grossa come un'otre per sbocconcellare questa leccornia. prego la nostra fata dei fornelli di darci una buona prossima descrizione di detta polenta: sale quanto?, versare subito la farina in acqua o attender che l'acqua bolla? deve essere spessa o un poco liquida? e poi i trucchi, tutti, per non combinare disastri colle pentole e il fornello nel preparare questo piatto nutriente e poco costoso...

Per piccolo da chioggia, Mi complimento per il suo pranzo, sicuramente saprà anche eseguire la mia ricetta alla perfezione (la briseê la trova già pronta nel banco frigo), le frittelle di castagne l'ho già fatte tra poco saranno pubblicate. Comunque ho provato anche a fare una piccola dose di polenta con la farina di castagne come mi chiedeva la scorsa settimana, ho fatto semplicemente come avrei cucinato la farina mais e l'ho condita con un po' di formaggio a pasta filante. E' stato un successo! A presto e grazie ancora

a Sara Intingola. buona. gia vien fame. il tutto colla pasta brisè è oltre le mie capacità di cuoco smargiasso ed estemporaneo permanente e però, come dire, le buone ricette si gustano anche solo a leggerle. un po' come i bravi compositori che leggendo lo spartito già intuiscono le inarrivabili armonie di Beethoven e Schubert. alle buone vacche che ci danno il cacio, all'infaticabile agricoltore che ci miete le spighe per la farina, all'acqua che colla sua grazia monda ogni cosa e impasta il nostro desinare e poi, pietosa, lava anche le nostre ingordigie (piatti, pentole etc) un simpatico omaggio ora che mi sto preparando un buon piattino di pasta colle verze bollite e la mozzarella tirolese scubettata sopra (garantita da mucche non alimentate a ogm). aiuto attendo: le frittelle di castagne. e se possibile anche una bella ricetta semplicissima colle patate.

Non dovevo leggere la ricetta adesso, all'ora di pranzo. Non posso più uscire a procurarmi tutti i formaggi del caso, pur avendo tantissima voglia di metterla subito in pratica! :-D
